Peaches and Cream Crumble

Equipment

  • 8 inch cast iron skillet

Ingredients
  

Peach Mixture

  • 4 cups sliced peaches
  • 2 Tbsp honey whiskey or lemon juice
  • 1/4 cup light brown sugar
  • 1 tsp salt
  • 1 tsp cinnamon
  • 2-3 tsp corn starch
  • 1/4 cup heavy cream

Crumble

  • 2 cups AP flour
  • 1/4 cup light brown sugar
  • 1 tsp baking powder
  • 1 tsp salt
  • 3-4 Tbsp coconut oil (solid) or butter

Cream

  • 1/4 cup heavy cream whip this with a whisk or a frother until it resembles whipped cream

Instructions
 

  • Add all peach mixture ingredients into one bowl (except for the cream) and set aside
  • Preheat oven to 375 F or 190 C
  • In a separate bowl, sift all dry ingredients for the crumble.
  • Add the coconut oil (or butter) and mix with dry ingredients until it resembles small chunks of dough.
  • Oil or butter cast iron skillet and bring to a medium heat on stove top
  • Add peach mixture to the skillet and let it sizzle for 2-3 minutes then add your heavy cream
  • Carefully top your sizzling peach mixture with the crumble and let sizzle for one more minute
  • Add the entire cast iron skillet in the oven and bake for about 15-30 minutes
  • Once the peaches and cream crumble starts to smell good, remove the skillet from the oven and allow to rest for about 5 minutes. (Remember to wear oven mitts)
  • In a small cup, add heavy cream and whip until it becomes whipped cream
  • Dish out your peaches and cream crumble and top with whipped cream
  • Enjoy!
