Vanilla coconut iced coffee has been our go-to drink during this crazy hot Texas summer! Very easy to make, not too sweet, and turns out delicious every single time! This refreshing drink is addicting so you will want to keep this recipe handy…
Iced Coffee Ingredients
Whole Bean Medium Roast Coffee
Always start with the best ingredients. This obviously starts with the coffee. I find the freshest tasting coffee comes right after grinding whole coffee beans at home. We personally love using this medium whole bean Texas pecan coffee from our local grocery store. Sometimes I will open the bag up and just smell it. Weird I know, but so is my coffee addiction.
You can absolutely adapt this recipe using cold brew coffee. The first time I tried this was at my friend’s house and she used cold brew coffee. I absolutely loved it and she was kind enough to give me the recipe. My husband and I have been making it almost every day since!
Coconut Sugar
Time to toss out the fancy expensive coffee sweeteners. Coconut sugar is where it’s at! It’s absolutely perfect for iced coffee. It flavors the drink without making it too sweet and it won’t overpower the coffee flavor. Coconut really compliments the vibe of a summer drink and tastes best served cold. We really enjoy this unrefined organic coconut sugar and use it for several other recipes that call for sweeteners. It is likely to be a little healthier and inexpensive compared to other specialty coffee sweeteners and syrups on the market.
Quality Vanilla
My husband’s mother gave us this vanilla after a trip to Mexico. We love this kind!!! I use it for all of my recipes that call for vanilla. Of course, you can use your current vanilla extract or whatever you have on hand. I do recommend you give this Mexican vanilla a try at some point. I don’t think you will regret it and you will likely switch over to this brand for good. This is another one of those things that I can sit and sniff the open bottle for an embarrassing amount of time.
Sea Salt
The tiniest pinch of sea salt makes a world of difference for this drink. We really love using Redmond Real Salt. I have been using this brand of mineral salt for years. It can bring any dish to another level and I can’t recommend it enough. I never really considered putting salt in my coffee before, but after my friend introduced me to the idea with her original recipe, I gave it a try and I’ve been hooked ever since. Remember, just a tiny bit goes a long way.
Your choice of creamer
Pouring creamer over iced coffee is the most satisfying part of the whole process. Just watching the stark white liquid bleed down the cold dark brew is another one of those things I can’t get enough of. Can you tell I am easily entertained?
When it comes to topping off your iced coffee, the choice is really up to you. We typically use a splash of half and half. It is so darn good and one of my personal favorites. I can say with confidence that I have already paired this recipe with almond milk and it was fantastic!
My tried and true home coffee gear
Cuisinart Grinder
There is NO reason to run out and purchase an expensive coffee grinder, this little Cuisinart grinder is all you need. I have been using this thing for years! I love that it’s easy to operate, easy to clean, and tuck away when I don’t need it. Its simple design is not bad to look at if you need to keep it out on your countertops. I simply put a lid full of coffee beans in this little guy and grind it for about 15 seconds and it’s perfect.
Ninja Coffee Bar
We purchased our ninja coffee maker last year and boy am I glad we did. I can not say enough good things about this coffee machine. Anything that is reliable easy to use and easy to clean is a win for me. I also really love that this coffee machine has an “over ice” brewing option. It is a great way to get a more concentrated coffee in a fraction of the time it takes to make a similar cold brew. You can still use regular strength coffee for this recipe, we just prefer a more concentrated coffee to start with, as the coffee will dilute when the ice melts. I honestly drink my iced coffee way too fast for dilution to be an issue. It’s probably not good that I drink it that fast, but again, I have an addiction.
I really hope you enjoy this refreshing cold iced coffee recipe! You likely have the ingredients in your kitchen already.
