Fresh Pie is the BEST Pie
Clearly, I needed to keep this American flag pie as classic and true to character as possible. I achieved this with only the best ingredients. For starters, I highly recommend using fresh fruit for this pie. I think the red from the strawberries and blue from the blueberry colors come out brighter and the flavor is waaaay better. I don’t think you necessarily need to use strawberries as I did. Cherries or raspberries would also work just fine.
You can still use pie filling from a can, but the color will likely be much darker. If you still choose this option, remember to dock your pie crust. This will avoid the bottom crust from turning out too soggy. You might even consider what bakers call “blind baking” or “pre-baking” your pie crust as well. This is because the pie filling from a can typically has a jello-like filling that essentially makes a seal over your bottom pie crust and doesn’t allow air to circulate and cook it all the way through.
Simple Homemade Pie Crust from Scratch!
A fresh pie crust from scratch is always best. My go-to pie crust recipe calls for buttermilk as the liquid ingredient. I started using buttermilk in my crusts a few years ago and never stopped since. The flavor of the buttermilk and almond extract is the perfect combination with a fresh fruit pie. You can absolutely use cold water, cold milk, or whatever you normally use for your pies. With this crust recipe, you will have more than enough dough to work with. The homemade pie crust makes this American flag pie almost look like an old vintage flag. I just love the way it looks when you pull it out of the oven. And the smell…so good!!!
One time I decided to bring this American flag pie to work. There was NO WAY I was gonna keep that thing at home. Lord knows I would have eaten the entire thing in less than a couple of days. Not to mention the fact that I would be eating vanilla ice cream along with it!
As pretty as the pie looked, there is something satisfying about watching each slice get devoured in less than a few hours! I was happy that the pie didn’t go to waste, and it is a tried and true recipe. One of my co-workers particularly loved it and she asked me to make another pie for her husband on his birthday.
Guuuurl! that pie is the bomb the amount of sweetness is just right. The crust, mmm mmm mmm DE LICIO SO GOOD.

Let’s get down to the recipe, shall we?
American Flag Pie Printable Recipe:
American Flag Pie
Equipment
- Star shaped cookie cutter
- Large cookie sheet
- Rolling Pin
- 9 inch pie dish
- 2 rigid flat surfaces (about the size of an index card).
- 3 large bowls for mixing wet and dry ingredients
- Measuring tools: 1 Cup, 1 Tablespoon, 1/4 teaspoon
- Pastry brush
- Pie wheel
Ingredients
- 2 Pie Crusts for top and bottom crust
- 2 Pounds Strawberries fresh
- 1 Pound Blueberries fresh
- 1 Cup AP Flour
- 1 Cup Sugar
- 1 Tablespoon Corn Starch
- 1/4 teaspoon Lemon extract
- 1 Tablespoon Cold cubed butter salted or unsalted
- 1 Small Egg use the egg white only
Instructions
- Combine all of your dry ingredients (flour, sugar, and corn starch) into one bowl.
- Rinse all of your fresh fruit (strawberries and blueberries) keep in separate bowls.
- Cut up your strawberries into quarters.
- Mix lemon extract with the strawberries.
- Mix about 3/4 of the dry ingredients with the strawberries and set aside.
- Mix the rest of the dry ingredients with the blueberries in a separate bowl and set aside.
- Dust your counter top with flour and get your cold bottom pie crust out of the fridge.
- Shape your bottom pie crust with your floured rolling pin into a large circle. Place your pie crust in your pie dish and shape the edges. Put the pie dish with bottom crust back in the fridge to keep cold.
- Pull out the top crust from the fridge. Roll out the dough into a long rectangle. Cut out your stars and stripes. Put them on the cookie sheet and back into the fridge.
- Use a couple flat surfaces to divide the pie circle into a quarter section. Fill this section with the blueberry mixture. The rest of the 3/4 of the pie will be filled with the strawberry mixture. Carefully pull out your flat dividers and adjust the fruit if needed.
- Take the stars and stripes back out of the fridge and place your stars over the blueberries and the stripes over the strawberries.
- Dot your pie with butter and give the crust a quick wash with a mix of egg white and a splash of water. Sprinkle the top of your pie with a little bit of granulated sugar and put your whole pie in the fridge to firm up.
- While your pie is firming up in the fridge, preheat your oven to 425 F or 218 C
- Bake your American flag pie for about 30-45 minutes
- Let it cool for at least 30 min to an hour and serve it up with some vanilla ice cream!
