
Soup? In the springtime? Ahhh but yes, soup feeds the soul, my friend. It can be savored any time of the year, and my spring veggie chicken soup is no exception! It is pure simple beauty, just like the sweet blossoms budding all around us right now. You won’t likely need to run to the grocery store for this one. It’s basically all the usual suspects hanging around in your kitchen. I kinda love that, less time cooking means more time enjoying the beautiful weather. Let’s talk about it…

Today was one of those days when we were lucky enough to get an early start. The weather was perfect for taking an early stroll around the neighborhood, then hitting the local park. My daughter loves to wave at fellow strollers, play on the playground and just be a sweet energetic toddler. I hope I never take these days for granted.


After the park, it was off to Dollar General to pick up a few necessities and browse around for some items to craft and decorate with for spring. I feel like the options were beautiful this year!
With a cartload of goodies, we finally made our way back home. I try my best to keep my little girl busy until nap time. The perfect way to carve out some time to sneak into the kitchen and make some delicious healthy soup for lunch!

Speaking of soup. Let’s get back to it!
There’s no need to keep this recipe OG. I only used the veggies I had on hand on this particular day. I happened to have carrots, onions, celery, and corn. As long as you use the fresh veggies you already have in your kitchen, you can whip this dish together with no problem. I’m thinking about making this dish again soon, but with some green cabbage and potatoes. My mouth is watering just thinking about it.

Spring Veggie Chicken Soup
Equipment
- 1 Heavy Pot with lid
- 1 Cutting Board I like the bendy ones, less mess
- 1 Good Chopping Knife I use my trusted Wüsthof Gourmet Nakiri Knife
- 1 Large Spoon For stirring ingredients
- 2 Measuring devices Cup, teaspoon
Ingredients
- 2 TBSP Olive Oil
- 1 Large Onion any color
- 4 Stalks Celery chop into large chunks
- 3 Large Carrots peeled and chopped into large chunks
- 2 Ears Corn kernels cut off
- 3-4 Cups Chicken stock or broth homemade or store brand
- 2 Cups Shredded Chicken boil 2-3 chicken breasts about 20 mins until cooked through and shred with a fork. Or use a rotisserie chicken.
- 2 tsp Seasoned Salt optional
- pinches Sea Salt to taste
- 1 tsp black pepper
- 2 tsp herbs de provence or your favorite herbs
Instructions
- Heat heavy pot on med-high with olive oil
- Saute all veggies until slightly cooked through (about 5 minutes)
- Add salts and pepper and stir
- Pour in chicken stock and simmer with lid on for a few minutes
- Add precooked shredded chicken and cook until meat is heated through
- Add herbs de provence and stir
Does it look too easy? That’s because it is. I have made this soup three times in the last week and it doesn’t get old. Healthy, easy, and can be done before your toddler wakes up from her quick midday nap. Check check and check!
